Mucus Scramble


I think my mistake is adding ground flax seeds to the eggs, but I'm getting ahead of myself. I initially wanted to make scrambled eggs with some tomatoes and zucchini. But, instead of using regular eggs, I decided to make it healthy by choosing to use egg whites. you can get cartons of just egg whites an any grocery store and that's what I had on hand.


I started by heating canola oil in a large non-stick pan. I added chopped garlic (we use pre-chopped garlic at the Atomic Test Kitchen; for $6 you can get a bucket full of chopped garlic from Costco). Then I threw in some stewed tomatoes, because there was a partial can in the refrigerator. I also threw in some sliced zucchini (also because there were some in the refrigerator). For spices, I added some dry oregano, basil and paprika and of course, salt and pepper. Then went in the egg whites. For some reason, the carton egg whites seem to be half filled with water, so I had to simmer off alot of liquid - it is not like regular eggs (probably never going to buy carton egg whites again).


Now, because I had used egg whites, I reckon I should make it really healthy and added two scoops of ground flax seeds (I can use more omega-3 in my diet, I figured). To top things off, I mixed in some cottage cheese into the scramble. So the result was a very good smelling scrambled eggs that tastes like mucus-y oatmeal. Eating it, makes you hate life. Imagine eating regurgitated oatmeal but without all the sourness of stomach acid. Seriously, just thinking about it makes me gag a bit. So remember - in the future, do not add ground flax seeds to scrambled eggs and do not use carton egg whites for pan frying.
